It’s our third and final entry for our Made with Moo Free Christmas edition, just in time for Christmas! This entry is Very Merry Moo Free Cupcakes from Louise, we hope you enjoy your chocolates.

Very Merry Moo Free Cupcakes

Ingredients

Cakes

  • 1 and a half cups gluten free flour
  • 3 tbsp cocoa powder
  • Half a cup of soft brown sugar
  • 3 tbsp maple syrup
  • 1 tbsp cider vinegar
  • 1 tsp vanilla essence
  • 5 tbsp oil
  • 1 cup cashew milk
  • 1 tsp cinnamon
  • Entry for quarter tsp nutmeg
  • 2 packs Moo Free Choocy Drops
  • 200g cherries chopped or whole
  • Orange zest (of 1 large orange)

Icing

  • 100g dairy free margarine
  • 200g icing sugar
  • 3 tbsp cocoa powder
  • 1 tsp vanilla essence
  • The juice of one orange
  • Moo Free chocolate (Bunnycomb is recommended)
  • Your choice of dried fruit (optional)

Method

  1. Use a chocolate mould to create cute chocolate shapes, filled with a fruity surprise to top the cupcakes. If you want to do this too using a silicone mould, It’s suggested you do this the night before to let them cool in time.

  2. Melt the chocolate over a pan of hot water and then pour into the moulds, leaving enough space for the fruity surprise. (You can use any dried fruit though, or some of the cherries).

  3. Leave them to set overnight. Alternatively, you can just grate Moo Free Chocolate over the icing to finish the cupcakes.

  4. Preheat the oven at 180 (fan assisted), 200 non-fan assisted. Place 12 cupcake cases in a cupcake tray.

  5. Sift the flour and add all the dry ingredients, then mix in all the wet ingredients, followed by the cherries and Choccy Drops.

  6. Divide the mixture into 12 cupcake cases and place in the oven for 25 minutes, or until a knife comes out clean.

  7. Leave them to cool on a wire rack while you make the icing.

  8. Cream the margarine and sugar slowly, adding the cocoa, vanilla and orange juice slowly as you go to make a buttercream.

  9. When the cakes are cool, cover in icing and use your chocolate decorations to decorate. You can also dust on a little cocoa or cinnamon over the icing to give an extra festive taste.
